
INGREDIENTS
- Rice (for 4 people)
- 1 x Pickled carrot
- 3 x finely chopped radish
- 1 x Avocado chopped
- 2 x finely celery sticks
- 1/4 x Iceberg, cut into quarters
- 4 x handfuls of microgreens
- Favourite protein (sliced chicken pictured)
- Sesame seeds
- Favourite dressing
- Salt, pepper & olive oil
INSTRUCTIONS
Cook your rice for 4 people. Whilst rice is cooking chop, slice with a peeler or julienne carrots. Place in a shallow dish, pour apple cider over carrots to just over and let sit.
To grill the lettuce, firstly cut half a lettuce into quarters and brush lettuce liberally with 1 1/2 tablespoons olive oil. Then sprinkle each with some salt.
Grill on high (don’t be shy) for 2-3 minutes, pressing with your tongs to make sure the lettuce gets a good sear. Flip and grill for 1 or 2 more minutes.
Remove from grill. Sprinkle with more salt and pepper. Optional extra, squeeze fresh lemon juice over each grilled lettuce.
Once the rice it cooked drain your carrots from the vinegar to create your pickled carrots.
It’s time to create your nourishment bowl. Place rice in the middle and then combine your mouthwatering ingredients around the rice including your delicious microgreens. Sprinkle with sesame seeds, olive oil a squeeze of lemon as well as salt and pepper to taste, or with your favourite dressing.
