INGREDIENTS

  • 2 field mushrooms
  • 1/2 cup of quinoa
  • 1/4 cup of feta
  • 2 handfuls of mixed Microgreens
  • 2 cloves Garlic
  • Butter
  • Olive oil
  • Salt and pepper

INSTRUCTIONS

To prepare mushrooms, crush 1 x garlic clove into each cap of the mushrooms, drizzle a 1 teaspoon of olive oil and add a 1/2 teaspoon butter (olive oil helps to stop the butter burning). Put baking paper on tray, roast mushrooms for 20-25mins at 180C.

Cook quinoa as per packet instructions

When mushrooms come out of the oven there will be juices in both caps of the mushrooms as well as the pan. Place mushrooms onto plate and pour the juices back into cap of mushroom.

Spoon a tablespoon of quinoa into the cap of mushroom and place a handful of microgreens onto the quinoa.
Top mushroom stack with feta or goats cheese, drizzle of olive oil and a twist of salt and pepper to taste.

Serves 2.
